Any of the pvp servers good?

As much as I enjoy playing my rogue on a blue server...I think I'm willing to restart and try on a pvp server. Maybe because its the risk factor involved or something to that factor. So here are my questions. Are these servers just a gankfest? Don't get me wrong I like a good pvp fight now and then but I also want to do some lvling. Also which server would be best and any rogue guilds on there?
