I've often wondered, why does fire always have to be weak against water and not water weak agains fire? Fire can evaporate water, you just need a really hot fire. I need a hobby....

Well, I'd say probably because even an extremely hot fire can be doused by an equivalent volume of water. It just takes enough to rob the fire of oxygen. In order to instantly vaporize any sizeable volume of water, you'd need a comparatively huge amount of energy.
It also matters the scale we talk about. Bucket of water Vs. Campfire isnt much of a contest, but something like the Sun vs. same-size body of water would be interesting, due to the water probably being broken down into base elements and being used as fuel.
We need a hobby.

Well, the problem here is that the sun is not a fire in the sense that it is not an oxygen-driven combustion reaction. It is a big ball of nuclear fusion, a process that cannot be stopped by starving it of oxygen (oxygen is not part of the reaction).
