Reverse Engineering a Food Seasoning

I have a favorite seasoning that I am almost out of.

It was made by a family who owned a butchershop in my home town. They moved to someplace in the mid west and I had been able to order it over the phone from them but the number I had has been disconnected and I can only assume they are out of business since googleing them gives me nothing current.

SO...I want to try to recreate this seasoning. I have 3 jars left.

Does anyone know of a company or a way to find out what is in this other than the obvious salt and paprika?

Well... Alton Brown lives in Atlanta, I believe. Maybe you can try writing him a letter or something and ask him? And I'm being serious, he just might, he seems like a pretty damn nice guy.

Otherwise, possibly go to a reasonably nice restaurant for dinner, and ask if the Chef can look at it, s/he may be able to give you some idea too.

I'm actually halfway decent at re-creating recipes I've tasted. Want to send me a sample? 1 tablespoon should be enough for me to get a rough idea of what's in it and I can play around with my extensive collection of herbs and spices to see if I can approximate it.

The ingredients should be on the lable, and if it's just a dry seasoning combination it should just be a matter of getting the right percentages.

The lable does list SOME but not ALL of the ingrediants...whats listed is Salt, Peper, Paprika and OTHER seasonings....

OTHER seasonings.... ?!?! It could be pure MSG or shavings from a huffalumpagus toenail.

A lot of seasons simply list "other spices" as an ingredient. I assume it's specifically to stop people from recreating their products using some loophole in label laws

It's probably 95%+ those first three, with 50%+ being the salt.
